Hummus

Ingredients:

  • 1 can (15.5-ounce) garbanzo beans, drained
  • 4 cloves garlic
  • 1/4 cup fresh lemon juice
  • 3/4 tsp salt
  • 1/2 tsp freshly ground black pepper
  • dash of hot sauce
  • 1/4 cup olive oil
  • parsley sprigs for garnish

Directions:

  1. Process first 6 ingredients in a food processor until smooth, scraping down the sides. Slowly pour olive oil into mixture, processing until smooth.
  2. Spoon into serving bowl, cover and chill. Garnish with parsley sprigs and serve with crackers.

Yield: 8 servings
