Chicken Marbella

Ingredients:

  • 1/2 cup chardonnay
  • 1/2 cup chicken broth
  • 1/2 cup pitted prunes
  • 1/4 cup packed brown sugar
  • 1/4 cup red wine vinegar
  • 1/4 cup pitted green olives
  • 4 cloves garlic, minced
  • 1 TBSP olive oil
  • 2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 boneless, skinless chicken breasts
  • 1/4 cup drained capers
  • hot cooked brown rice

Directions:

  1. In a large saucepan, combine the wine, broth, prunes, sugar, vinegar, olives, garlic, oil, oregano, salt and pepper. Bring to a simmer over medium heat. Simmer 10 minutes, uncovered.
  2. Meanwhile, preheat the oven to 400 degrees F. Place the chicken in a lightly greased 13 x 9-inch baking dish. Pour the sauce over the chicken, turning to coat. Scatter the capers over the top. Bake 30 to 35 minutes or until the chicken is completely done.
  3. Serve warm over hot cooked brown rice.
