- 1/2 minced shallot
- 1 TBSP white wine vinegar
- 2/3 to 3/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Select ONE of the following:
- juice of 1 large lemon and 1 TBSP fresh thyme leaves OR
- juice of 2 limes and 1 TBSP chopped fresh cilantro OR
- juice of 1 medium orange and 1 TBSP chopped fresh oregano OR
- juice of 1/2 grapefruit and 1 TBSP chopped fresh basil
- Place all ingredients in a jar with a tight-fitting lid. Cover and shake to emulsify.
- Use immediately or refrigerate until ready to use.
Yield: 1 cup
