Peach Soup


  • 3-1/2 cups sliced peaches
  • juice of 1/2 lemon
  • 1 cinnamon stick
  • 2 cups water
  • pinch of salt
  • 1/4 cup sugar
  • 1 TBSP cornstarch
  • 2 TBSP cold water
  • 1/4 cup heavy cream


  1. Combine peaches, lemon juice, cinnamon stick and 2 cups water in a saucepan. Bring to a boil, reduce heat and simmer 10 minutes. Stir in salt and sugar.
  2. Mix cornstarch with cold water in a small bowl until smooth. Stir into peach mixture. Bring to a boil, reduce heat and simmer 2 minutes. Remove from heat and discard cinnamon stick.
  3. Cool slightly and puree mixture in blender. Chill thoroughly. Stir in cream just before serving. Serve in chilled glasses.

Yield: 4-6 servings
