Peach Soup

Ingredients:
- 3-1/2 cups sliced peaches
- juice of 1/2 lemon
- 1 cinnamon stick
- 2 cups water
- pinch of salt
- 1/4 cup sugar
- 1 TBSP cornstarch
- 2 TBSP cold water
- 1/4 cup heavy cream
Directions:
- Combine peaches, lemon juice, cinnamon stick and 2 cups water in a saucepan. Bring to a boil, reduce heat and simmer 10 minutes. Stir in salt and sugar.
- Mix cornstarch with cold water in a small bowl until smooth. Stir into peach mixture. Bring to a boil, reduce heat and simmer 2 minutes. Remove from heat and discard cinnamon stick.
- Cool slightly and puree mixture in blender. Chill thoroughly. Stir in cream just before serving. Serve in chilled glasses.
Yield: 4-6 servings
